    Over the last decade I have become absolutely enamored with aged sake. It’s like Cabernet: Some people prefer a 10- or 20-year-old Napa Cabernet Sauvignon. Others prefer a recent release. Sure, they’ve got the same grape on the label, but think about the vast and enthralling differences in character, in complexity, that age brings. 

    Showing a vibrant pale-golden straw color in the glass, its complex aromas are led by a hint of crisp green apple, with lemon oil, white truffle, caramel, mandarin blossom, mint, and sandalwood. The palate is complex and expansive, with hints of peach, lemon, and spice, with a supple texture. The vibrant acidity resolves in a long lasting finish—it’s perfect to pair with shellfish but ideal for many occasions. 

    Imayo Tsukasa was established in 1767 in Niigata City. I have been a huge fan for years, and I fall more and more in love with the brewery every time I visit. In early 2020, they contacted the oldest barrel maker in the country, a legend who was about to retire. The team went down to his shop and commissioned their cedar tank from the cooper. They hope to lead an effort to keep the atelier in business.  

    “Hito To Ki” translates to “people and tree.” It can also be heard as “Hito Toki”, which means “a moment in time" (the Japanese LOVE a play on words). This sake—creamy, complex, rich, and spiced, with a kiss of bitter herb and a long-lasting finish—is reminiscent of a well-crafted Burgundian Chardonnay, and it will continue to develop gracefully if stored properly.
