65% Pinot Noir; 35% Chardonnay. This very deep and genuinely complex effort reminds far more of a long-aged "reserve" than it does of a basic non-vintage brut. Its expansive, well-composed expressions of toast, fresh bread and chalk are backed up by a terrific mousse of very tiny, long-lasting bubbles, and it delivers plenty to like at the price.
(65% pinot noir and 25% chardonnay): Light, bright gold. Green apple and quinine on the citrus-accented nose. Very dry and nervy on the palate, which offers taut lemon and orchard fruit flavors and a hint of bitter herbs. Slightly pinched on the finish but there's good focus and cut here. This bubbly has a low 2.95 pH, which no doubt contributes to its racy character.
