Jacques Diebolt is passionately committed to the idea that Champagne is first and foremost a wine, and that good winemaking starts in the vineyard. His work in the vineyard is paired with painstakingly accurate cellar work, which includes fermentation of the still wine in oak barrels, and bottling without collage or filtration, "...in order to make Champagne the way my grandfather did." Almost all of Diebolt's small production is sold to three-star restaurants in France. Jacques' Tête de Cuvée of refined Blanc de Blancs is this barrel-fermented wine, "Fleur de Passion," a Champagne of exceptional breed and polished finesse. Always bottled as a single vintage, it is endowed with brilliant acidity, vibrant fruit and marrowy texture. This is aristocratic wine of great complexity and opulent flavors, destined to a long, marvelous future in the bottle. Imagine (young, very young) Montrachet with bubbles.
