1980 Mas Amiel Maury Millesime

Olivier Decelle purchased Mas Amiel in 1997. His artisan sensibility and meticulous approach to biodynamic farming have brought new appreciation to a declining appellation--known almost exclusively for late-harvest, fortified red wine. Maury's extreme climate (hot, arid summers and cold, harsh winters) lends itself to biodynamic techniques; ripeness and intensity are easy to achieve, finesse and backbone much harder. The Cuvèe Speciale is the most traditional of Oliver's wines. Grenache, Carignan and Maccabeu are harvested late, then fermented in large oak casks. Adding grape neutral spirits arrests the fermentation, and the result is set to age in 70-liter demi-johns called bonbonnes. After a year the wine is moved to large casks for the remaining nine years. The oxidative effect of this treatment brings out the toffee and cocoa undercurrents, which are conveyed by a creamy, robust texture. The Millesieme celebrates one thousand years of wine-making in Maury. Excellent with rich cheeses, braised meats and chocolate desserts.
