His commitment to quality was recognized by the I.N.A.O. when his own standards were applied as the rules governing the new appellation Viré-Clessé. The regulations limit yields to 55 hectoliter/hectare, and residual sugar to 3 grams or less per liter--standards that Bonhomme has always exceeded.
