At the heart of Paolo de Marchi's wine-making philosophy is his sense of what is typically Tuscan. Amid the over-extracted, imitative wines produced in Tuscany today, Paolo's elegant renditions of things Tuscan quietly exalt the beauty of this ancient culture and landscape.
At once delicate and intense, Paolo's Vin Santo - the ancient wine of celebrations - is a prime example of this philosophy. Made from white grapes (Malvasia and Trebbiano) harvested early, they are allowed to wither into raisins, then pressed and barrel fermented the following January.
Sweet spice, honey and toasted almonds are the first impressions on the nose, dried orange and exotic fruit follow closely behind balanced by a fresh, focused acidity: a complexity achieved only by eiswein and the best Sauternes.
