Merchant Reviews At the heart of Paolo de Marchi's wine-making philosophy is his sense of what is typically Tuscan. Amid the over-extracted, imitative wines produced in Tuscany today, Paolo's elegant renditions of things Tuscan quietly exalt the beauty of this ancient culture and landscape.
At once delicate and intense, Paolo's Vin Santo - the ancient wine of celebrations - is a prime example of this philosophy. Made from white grapes (Malvasia and Trebbiano) harvested early, they are allowed to wither into raisins, then pressed and barrel fermented the following January.
