NV Diebolt-Vallois Blanc de Blancs Brut (in magnum)
|
Merchant Reviews This wine comes from vineyards in Cramant, a Grand Cru village in the Côte des Blancs, a little south of Epernay. Jacques Diebolt is passionately committed to the idea that Champagne is first and foremost a wine, and that good winemaking starts in the vineyard. Painstakingly accurate cellar work includes fermentation of the still wine in oak barrels, and bottling without collage or filtration "in order to make Champagne the way my grandfather did." Almost all of Diebolt's small production is sold to three-star restaurants in France. -- Greg Moore, Moore Brothers Wine Company, April 1, 2006

Winemaker's Note: Made entirely from Grand Cru hillside vineyards above Cramant, the most celebrated village for 'blanc de blancs' in Champagne. Light on the palate, but with the great persistance for which Jacques Diebolt has built his international reputation. Very small production from the family's tiny 25 acre esate. |
