48% Chardonnay ; 43% Pinot Noir; 6% Pinot Gris and 3% Pinot Muenier. Finished with 3.0% sugar and very much a typical sec sparkler, this softly bubbled, rather straightforward effort hints only briefly at yeast and, while pleasant enough, is essentially a simple, moderately sweet quaff.
(48% chardonnay, 43% pinot noir, 6% pinot gris and 3% pinot meunier): Light yellow, with a gentle bead. Ripe pear and nectarine on the nose, with a hint of spun sugar. Smooth, gently sweet orchard fruit and melon flavors are given a slightly bitter edge by a touch of fruit pit and are a tad loose-knit. Finishes on the sweet side but avoids coming off cloying. A bit of late-harvest muscat is used in the dosage, which probably accounts for the pronounced fruitiness.

Mumm Napa Cuvee M champagne tastes like a bilini champagne cocktail, sweet and fuity; once can taste the pinot noir grapes and a peachy fruit flavor. I used to frequent the Palomino Restaurant and they featured a champagne icy Palini cocktail in a very tall glass. If this champagne were frozen and served as an icy drink it would compare to the Palomino Palini. I fell in love with this drink! Unfortunately, Palomino stopped serving the Palini cocktail when their icy machine broke.
