(Capiaux's oldest source): Good medium red. Tight but nicely perfumed nose offers cherry, cola, anise, black pepper and a whiff of rum raisin. Darker than the Chimera bottling, with the pepper and Asian spice elements giving the mid-palate an attractively brisk quality. Distinctly wild, brooding pinot with lovely intensity and length. As this is normally a low-tannin site, Capiaux adds back 10% to 15% of the stems to give the wine more structural support.
