Named for its original proprietor, who, sadly, left us in 2000, Domaine Francois Raveneau is a goliath in Chablis. Raveneau's two sons, Bernard & Jean-Marc, now continue the family tradition, maintaining a commitment to natural wine.

($49; bottled in December of 2002) Reticent aromas of honey, spices and minerals. Quite closed in the mouth, and more classic in style than the Forets. Dense and broad but youthfully dry. Really opens out on the back end, finishing adamantly dry, with a strong spice character. This was aged in 50% new oak.
