Beet and celery root aromas. Glossy in the mouth yet with underlying firmness of stony minerality. Offers a brothy meatiness, a note of quinine, and a suggestion of sweet but pungent, faintly astringent parsnip. Clinging, pungent, faintly oily but absolutely clear as a bell on the finish.
