($87) Pale orange. Deep red berries and cherry on the nose, with a smoky mineral undertone and a wild, meaty quality. Weighty raspberry and bitter cherry flavors are impressively focused, possessing red wine-like depth. As serious a pink Champagne as I can recall tasting, finishing with excellent thrust and persistent notes of cured meat and fresh blood. I'd serve this with a rare steak, or steak tartare.
