2006 Mario Schiopetto Tocai Friulano Collio

The late Mario Schiopetto was partly responsible for modernizing white wine in Italy. Taking close notes on his travels in France and Germany, he brought back a number of strategies to his native Friuli, most notably the use of stainless steel tanks for fermentation. The estate, now run by Mario's children,  carries on with many superbly made bottlings, including a benchmark Tocai and a crisp Sauvignon.
