2006 Domaine du Vissoux/Pierre-Marie Chermette Moulin-A-Vent Les Trois Roches

Pierre Chermette makes some of the most natural and wild Beaujolais out there, made without chaptalization, commercial yeasts or filtration. How is this possible? He harvests his grapes when they are so ripe that there's no need for the introduction of extra sugar.  Vissoux's Moulin à Vent bottling has uncanny structure for Beaujolais, thanks to the oak barriques used for fermentation and aging. Chermette's wines are essentially what one could have enjoyed while sitting in a cafe in Lyon in the 1950s.
