This signature Mosel estate's wines, with their low alcohol, high residual sugar and considerable retention of CO₂, age at a glacial pace. This was the case in the years after World War I, when the estate first gained its current following, and it's the case now, as Manfred Prüm has done a fine job of continuing the legacy initiated by his grandfather. In addition to the wines from the Graacher Himmelreich and Zeltinger Sonnenuhr, Prüm's less frequently seen Rieslings from Bernkastel and Zeltinger can be consistently recommended.
