Founded in 1973 by Tom Dehlinger, a UC Davis graduate, Dehlinger Winery has a rep for quality not quantity. Production here has topped out at about 7,000 cases per vintage, a figure that has risen steadily since the initial 14 acres were planted in 1975.

($35; 100% cabernet sauvignon) Deep, bright ruby. Sweet, inviting aromas of cherry, plum, mocha, chocolate and tobacco. Juicy and shapely, with good energy to the blackcurrant, bitter cherry and smoke flavors. Offers a suave blend of ripeness and lift and finishes with fine, palate-dusting tannins and very good length. An immediately accessible wine that's also balanced to age.
