Fevre was once good. Now it's great. In fact, the improvement of this house is one of the most exciting developments in Chablis in the past 20 years. The ownership of the Henriot family of Champagne, which also owns Bouchard Père et Fils in Beaune, has resulted in a striking transformation.

($36) Bright pale green. Lightly metallic aromas of lime, ginger and white pepper; there's something downright gr u ner-like about this wine. Then broad and very pure in the mouth, and a bit more gentle than the rather bracing nose suggests. But this concentrated wine boasts terrific tactile density and really saturates the palate and teeth on the long aftertaste. The north wind in 2008 concentrated the sugars and the acids, and resulted in a loss of volume on the order of 20%, noted Seguier.
