($14) Good medium red. Aromas of cherry, spices, licorice and mint. Slightly tart flavors of sour cherry, licorice and herbs are enlivened and intensified by brisk acidity. This almost metallic wine needs to be served with food but should prove to be very flexible at the dinner table. Silvano Pasquera-Elio told me this wine was done entirely in stainless steel as the family did not have any available space in large casks in 2008. The result is a wine that relies more on its acids than tannins for structure and shows more cherry and licorice than bitter chocolate.
