(still in a stainless steel tank) Bright, pale yellow. Precise, high-pitched nose offers lemon, lime, ginger and nutmeg. Almost painfully mineral and incisive in the mouth, with considerably more definition and energy than the basic Butteaux bottling. Citrus, stone and spice flavors display outstanding precision. The 2008 is sweeter, but this is a purist's wine: all cut today, but finishing with terrific savory persistence.
