(100% barrel-fermented--"to get creaminess," according to head winemaker Genevieve Janssens; includes 4% semillon):  Bright yellow-green.  Aromas of lime, white flowers, vanilla and almond, plus a hint of tropical fruits.  Offers an enticingly rich, pliant texture but with bracing flavors of green tropical fruits, citrus and fresh herbs.  Complicated by a subtle nutty quality from the oak and given a firm edge on the very long finish by solid minerality.  This vintage was a challenge for To Kalon sauvignon owing to the severe heat spike in late August, noted Janssens.  For the first time a sorting was done at the harvest, to eliminate burned grapes, which had reached very high sugar levels.
