(this was in fut until December, then was moved into a concrete tank until being bottled in early summer of 2012): Apple, peppery herbs and a hint of mint on the nose. Rather delicate in texture but with good salty mineral thrust to the apple, citrus and pepper flavors. Finishes with slowly mounting perfume and very good lemony cut. Taut and nicely done. This has a very healthy 4.5 grams per liter of acidity, according to enologist Julien Desplans.
