In six generations of winemaking here in Chablis, the Michel family has developed a no nonsense approach. You won't find the distracting presence of oak in these immaculate Chardonnays, because no wood is used in their cellaring.

Light yellow. Austere nose hints at white pepper, crushed rock and oyster shell. Then suppler in the mouth than the young Forets but without quite that wine's personality or structure. The combination of lemony acidity and stony mineral underpinning gives the finish a youthfully dry edge that calls for at least a few years of patience.
