Fair and Balanced

The wife of a friend that had this bottle since 1990, inadvertedly opened it for a casual mid-week family dinner that I was fortunate to be attending, my point, half of this expensive and quality wine was poured out at evening end! I am new to the cultural fineness of great wine; however, to my surprise, this wine was immediately discerned to me as neutral in every way. I concluded from common sense, not being an expert, that this must be a characteristic of a great wine because neutrality could not offend anyone and through the concept of offensive dominance over an equally but oppositely sensed postive as in a bias one may desire or retreat from in rating the flavor/aroma of a wine, then neutrality is sure to be found desirable by a majority if they apply fair and balanced assessment and do not rate the wine solely because their bias is not found present. I'm curious, do people that profess to know, think similalry of this wine and use of the measure of neutrality as judgement and which I now seek after having had J. Phelps 1990?
P.S. The 18 year old cork disintegrated upon removal I presume because of upright storage; what causes/prevents this?
