Caymus Celebration
04/22/2008
by O'Connell12688638
We were down to 1 bottle of Caymus that we brought home from our honeymoon 15 years ago - directly from Napa. We had about 12 bottles, some lesser wines, but about 4 or 5 bottles of Caymus and 4 or 5 bottles of Silver Oak. We had stopped at Caymus and had a wonderful Zinfandel and decided this and Silver Oak would be our primary choices for "take home". We were down to 1 bottle of each. Today, we got incredible news. My husband of 15.5 years is Cancer Free after a 1 1/2 year battle and an outcome that looked grim 1 1/2 years ago. Thanks to the right doctors (NYU in Manhattan - Drs. Herber Lepor, Sanjir Tanejas, And San Filliop) my husband is Cancer Free today. We are savoring every moment of life and cracked opened our last bottle of 1991 Caymus Cabernet Sauvignon Special Selection - Wow! what a choice. All we can say is that there is no better way to celebrate life than with this 1991 Cabernet. I think that says it all.
Great wine to drink now!

I just came from a tasting where we tasted the new Caymus 2003 along side Insignia, BV Georges Le Tour, Merryvale Profile, etc. and the Caymus was the class of the show. Much to my surprise I found a bottle of the 91 Special Select at my dads house a week later. With some of his family recipe prime rib, we popped it open and it was wonderful. Still fruity but also intense but not too intense. Better as it sat there. I'm no wine opiner so I'll just say it was the best wine I've had in a long time. Drink up now! The only bummer is we only had one bottle! We moved on to a Heitz Napa Cab and a Perry Creek Celler Select Syrah which were both very good as well but not in the same class. This was better than a late 80's Heitz Marthas Vineyard Cab I had in my opinion.

About Napa Valley

Napa Valley is the most famous wine-growing area in the U.S. It begins at the base of Mount St. Helena in the north and tapers off some 30 miles to the south into the floodplain where the Napa River enters San Francisco Bay. From Mount St. Helena to the city of Napa, the valley is defined by two north-south ridgelines of the Coast Range Mountains.

Varietal Image
Cabernet Sauvignon

Cabernet Sauvignon built its reputation on Bordeaux's Left Bank. Here, in the district of Medoc, the varietal is the key component of blended wines that also may include some Merlot and Cabernet Franc, and even Malbec and Petit Verdot. Moving slightly south, Cabernet Sauvignon meets Merlot in roughly equal proportions in the red wines of Graves. In both of these Bordeaux regions, the top bottles...
