Rose is on fire these days, as wine-lovers have begun to realize that pink wines aren't just cheap, sweet and forgettable. Most often produced by discarding the skins of red grapes prior to fermentation, rose wines range in style from crisp and light-bodied to fleshy and rich. The best wines exhibit the brightness of white wines, with the added complexity of lighter reds. Their flexibility at the table is as limitless as your imagination. Try the lighter styles with seafood or salads, or on their own. The richer styles work nicely with poultry and lighter red meat dishes, or cheeses. While the vast majority of roses are intended to be drunk within a year of the vintage, most will hold up fine for another year, or even more in the case of wines from the southern French regions of Bandol and Tavel.
