    The Winemaker Who Started it All

    Paolo Vagaggini was an early architect of “L’influenza Francese” (“The French Influence”) in Montalcino. In the 1990s, along with famed Bordeaux consultant Yves Glories (Château Margaux and Haut-Brion), Vagaggini revolutionized the way Sangiovese was farmed and aged, dramatically elevating the quality of Brunello throughout the region. Today’s 2011 La Togata Brunello was crafted by the master himself, using the same techniques he pioneered two decades earlier.

    The essence of The French Influence was twofold: better pruning and canopy management tempered the effects of the hot Tuscan sun, allowing Sangiovese to maintain freshness and mouthwatering acidity; while the introduction of new French barriques for aging Sangiovese replaced the sometimes decades-old barrels that were in use, eliminating bacteria and producing a level of fruit-driven purity never before seen in Brunello.

    The results speak for themselves, but in the case of La Togata’s 2011 Brunello, Antonio Galloni couldn’t resist piling on. Galloni called it “attractive” and “effortless.” Chef Michael White of Michelin-starred Marea would seem to agree, as he’s pouring this 2011 by-the-glass, next to his 50-day dry aged sirloin.
