    On our last trip to the Northern Rhône, the most striking view came at the top of Hermitage Hill.

    When we talk about drinking the Northern Rhône every night, this is the wine we have in mind. Deep purple in color, showing textbook aromas of blackberry, plum, cracked peppercorn, charcuterie, smoke, and dried violets, it’s got the region’s signature black fruit, smoke, and spice all held taut by firm but velvety-edged tannins and a kiss of fresh acidity.     Paul Jaboulet Aîné is an icon, and just over a decade ago, the domaine was purchased by the Frey family (owners of Champagne Ayala and Bordeaux Third Growth La Lagune and partners in Billecart-Salmon), who have labored meticulously to elevate the estate. They’ve modernized the winemaking and focused on vineyard management, converting some of the domaine’s most famed parcels to organic viticulture.
