    Grower Champagne from Salon’s Sacred Soil

    Only Champagne is Champagne, and only 17 Grand Cru villages sit atop the region’s cutthroat hierarchy. And of the Grand Cru villages, none inspires more awe, respect, and envy than Le Mesnil-sur-Oger.

    Practically every last vine in this hallowed region is planted to Chardonnay. The chalk-rich soil and Kimmeridgian limestone deposits are uniquely suited to the grape, and infuse the rich, sparkling Champagnes of Le Mesnil with unparalleled chiseled purity and vibrancy. The top bottlings need no introduction: Salon ($450) is produced strictly from Le Mesnil fruit, and Krug’s ultra-exclusive Clos du Mesnil ($250) comes from one prized 1.85-acre parcel in the middle of the village.

    But the incomparable soil and exposure don’t just benefit Salon and Krug. A host of grower-producers — like the Cazals family, producers of today’s Carte d’Or Grand Cru Champagne offer — buck the dominant system by controlling the entire process, from pruning to the final tightening of the muselet.

    Founded in the Côte des Blancs in 1897, Maison Cazals is now a 22-acre, 10-employee operation led by fourth-generation Delphine Cazals. Nearly half of the fruit for their Carte d’Or Blanc de Blancs is grown in the nearby Grand Cru village of Oger, while the lion’s share comes from the incomparable Le Mesnil-sur-Oger, just a stone’s throw from the vineyard sources of Salon and Krug.

    The NV Cazals Carte d’Or Blanc de Blancs Grand Cru is shimmering gold with a fine mousse, and perfumed with candied lemon, marzipan, and white lilies. On the palate, a creamy mouthfeel is balanced by crisp acidity, while juicy Meyer lemon, fresh-cut apples, and marzipan notes wash over the palate. Nervy tension gives way to a long and layered finish, with a chalky minerality and lingering lemon-zest note.
