Champagne Taittinger opened its showplace winery in Carneros in 1989, where it specializes in making sparkling wines that are creamy yet light on their feet. Of note is the Château itself, a sprawling, 18th century-style building, modeled after the Taittinger house, Château de la Marquetterie, in Champagne. Winemaker Eileen Crane, hand picked by Claude Taittinger for her position at Domaine Carneros, specializes in sparkling wines, and has managed the Domaine's organically farmed vineyard from the start. She also oversaw the construction of a facility for the production of Pinot Noir in 2003 -- at the time it boasted the largest collection of solar panels of any winery in the world. The prestige bottling here is Le Reve, one of California's classiest examples of sparkling wine. It undergoes long aging on its lees and is especially dense and complex, with characteristic chalk, citrus, toast and mineral elements and good cellaring potential.
