In the heart of Chianti Classico, Paolo di Marchi has dedicated himself to the vines at Isole e Olena, where he took over at the tender age of 20. Paolo eschews the Cabernet many of his neighbors have begun to incorporate into their Chiantis, believing it overshadows the Sangiovese. His, are true Tuscan wines, which call on tradition for their greatness. Leading the pack is Cepparello, a barrique-aged Sangiovese classified as an IGT - because at the time of its creation in the 1980s, a wine comprising 100% Sangiovese could not legally be labelled as Chianti. There is a Chianti Classico and a Vin Santo, as well as some excellent wines from the Collezione de Marchi label, including a Syrah called Eremo, a Cabernet Sauvignon and a Chardonnay.
