    The Magic of “Pie Franco” Vines

    Our Master Somm, Sur Lucero, was turned on to Bodegas Valbusenda’s mythical Vivo Toro by his sommelier friend at San Sebastian’s Rekondo restaurant, regarded by many as having the greatest wine program in the world. Made from ancient, own-rooted Tinto de Toro (Tempranillo) and basically unknown outside of MICHELIN-starred restaurants in places like San Sebastian, Madrid, and Barcelona, this wine is a supercharged, blacker, fuller version of Rioja.

    Wine has been made in this sweltering, dusty corner of Castilla y Leon since before the Romans came, and by the 13th century it was the preferred wine of the Castilian royal court. Toro wine also quenched sailors’ thirst on the Niña, Pinta, and Santa María

    The wine comes from very old, pie franco (ungrafted) vines planted on the high plain of Toro. Vines like these are a true rarity, and bottlings from them often attain mythical status in the wine trade, thanks to the crystal-clear way they express their terroir. 

    The other key to this wine is the expert rendering of the fruit from these gnarled old vines, thanks to the thoroughly modern equipment and temperature-controlled at Bodegas Valbusenda, a relatively new, sleek winery and five-star hotel. No expense is spared to produce Toro wines of world-class caliber, and it shows in the Vivo Toro. It’s easy to see why this deep, black-fruited beauty has become such a sensation in Basque-country restaurants like Rekondo and Kaia Kaipe, and at Árbore da Veira in Galicia.
