The Only Pinot Grigio You’ll Find on the Wine List at Thomas Keller’s Per Se

Per Se’s rise into the pantheon of the world’s top dining destinations has been meteoric. Thomas Keller’s iconic New York hotspot didn’t just redefine expectations for haute cuisine around Columbus Circle, he also nudged younger chefs to raise their game in cities like Chicago, Miami, and Las Vegas. Michel Couvreux, Per Se’s head sommelier and former beverage director at Le Bernadin, thoughtfully curates a wine program around Keller’s take on modern American cuisine. In addition to the Tiefenbrunner, mineral whites from Sancerre, Chablis, and Alsace feature prominently on the wine list and perfectly align with Keller’s emphasis on freshness and simplicity.

But when it comes to northern Italy’s most popular white, the rich, bracing Pinot Grigio grown on Alto Adige’s steep hillsides in the shadow of the snow-capped Dolomites, just one makes the cut. Not surprisingly, that brilliant alpine white is crafted by the Tiefenbrunner family in the Südtirol from the chalk and gravel soils of the 15 hectares of Vigneti delle Dolomiti.

2015 was an extremely memorable vintage, the best since 2010. The years in between were plagued by drought, uneven temperatures and pervasive rain. 2015 ended the streak producing well-rounded whites laced with polished, ripe fruit and snappy minerality. Spring saw early budbreak in April. May brought intense thunderstorms but most crops were spared significant damage. A record hot summer in July slowed vine growth. Conditions turned at the beginning of harvest in September, with several weeks of cooler temperatures promoting full ripening, especially in white varietals.
