    Steely, Powerful, and Delightful All at Once

    Savennières is one of the world’s great appellations, and it produces one of the world’s great white wines: powerful, dry Chenin Blanc that stands toe-to-toe with stellar white Burgundies—and Domaine des Baumard stands at the top of the Savennières pyramid.

    Their 2018 is Brad Pitt in Once Upon a Time in Hollywood: brilliantly chiseled and powerful yet easygoing and happy enough to pair with anything on your table. That’s a rare combination, likely to draw compliments from your dining companions, especially if you’re serving it alongside MICHELIN-starred Bresca’s stunning tomato-and-stone-fruit dish with stracciatella and za’atar granola.

    When the wine hits your glass, it bombards you with aromas headlined by pear, gardenia, and sage, previewing a densely mineral palate that adds the region’s signature lanolin. As Bresca’s Beverage Director Will Patton notes, “there are few better wines to start a meal with.”

    He went on to point out that this bottle “demonstrates how important growing up in a vineyard can be,” and winemaker Florent Baumard seems to have the area’s granite soils in his veins. He’s also got access to some of the best vineyards in Savennières, including the Clos Saint-Yves, a historic site that forms the backbone of this bottle.

    It’s a wine that often benefits from a bit of age, or an hour in the decanter—and also from being served a bit warmer than many other white wines. Do that and you get a singular experience—one we treasure every time we open a bottle.
