Wine Enthusiast’s #1 Prosecco

The Ca’ dei Zago Rifermentato in Bottiglia Valdobbiadene is a shining example of one of the historic and most highly regarded expressions of artisanal Prosecco in Italy.

Their 2020 release was Wine Enthusiast’s top-rated Prosecco of the 2020 vintage, ranking #29 on the 2021 Enthusiast 100 and pulling down an impressive 94-point score. The magazine called it “one of the very best of the col fondo, or metodo ancestrale versions.”

Col fondo, meaning “with bottom,” refers to a traditional method of vinification almost identical to methode champenoise, except there’s no dosage or disgorgement, so the lees remain at the bottom of the bottle. The resulting wine is frizzante, bone-dry, and beautifully lush and grand on the palate.

It’s a method that demands near-perfection in the vineyard and cellar, and fifth-generation winemaker Christian Zago pulls off the high-wire act brilliantly. Biodynamic farming, 50-year-old vines, and time-tested techniques make for a wine that’s as ethereally light as it is deep, with a marzipan-like creaminess. 

Historically, col fondo Prosecco hardly ever makes it out of local towns like Valdobbiadene. At the homes of winemaker friends or at restaurants in small villages, this Prosecco is what you’ll be served: slightly cloudy, beautifully fragrant, and often poured out of an unlabeled bottle.
