2021 Domaine du Chardonnay Chablis Cuvee Paradis 750 ml

Domaine du Chardonnay was founded in 1987, when three partners—Etienne Boileau, Christian Simon, and William Nahan—combined their operations in the heart of Chablis. Over the decades, they built one of the region's most respected estates, earning gold medals at the Concours Générale Agricole de Paris and establishing a reputation for wines of genuine character and precision. Since 2019, the domaine has been in the hands of Arnaud Nahan and Thomas Labille, who have continued that tradition while earning HVE Level 3 sustainability certification—among the highest environmental designations in French viticulture.

The Cuvée Paradis comes from the estate's most prized parcels, vinified to showcase the full depth of Chablis terroir: those ancient Kimmeridgian soils, formed from the fossilized seabeds of a 150-million-year-old ocean, that give great Chablis its unmistakable saline, mineral backbone.

2021 was a year that demanded everything from Chablis vignerons. Spring frosts devastated yields across the appellation; a cold, wet summer tested nerves and canopy management skills all the way to harvest. But the fruit that survived was concentrated, vivid, and recalled vintages from decades ago. Decanter called it the first vintage since 2017 to fully demonstrate the classical elements that define Chablis at its finest. Labille coaxed something extraordinary from a year that had no right to be this good.
