Stunning Sauvignon from Sonoma’s “It” Winemaker
Thanks to Wine Access members’ support of Aperture Wines and The Setting, we’re happy to offer the 2021 version of The Setting Sauvignon Blanc. It’s Wine Advocate’s top-scoring Sauvignon Blanc of the vintage from Napa or Sonoma—but that’s just the beginning.
Rising rock-star winemaker Jesse Katz learned a trick or two about creating white wine while at Château Haut-Brion, whose 2021 white sells for $800. For The Setting, Katz uses EXACTLY the same 60-gallon Seguin-Moreau barrels with neutral staves and high-toast acacia heads deployed at the legendary First Growth, giving a perfect brushstroke of spice without muffling the clarion clang of citrus fruit. He also learned a few things at Screaming Eagle, whose mythical Sauvignon Blanc sells for over $4,000!
The result in the grand 2021 Sonoma vintage—one whose wines Antonio Galloni called “deep, beautifully layered and highly expressive of site”—is something Wine Advocate loved for its “concentrated, expansive flavors and…ultra satiny texture.”
Katz is one of the most respected wine professionals in California. He’s been named a Wine Enthusiast 40 Under 40 Tastemaker, a Wine Spectator Rising Star, and was the first winemaker to land on Forbes’ 30 Under 30 list. “Cult” is a word freely thrown around his releases for Devil Proof, Aperture, and The Setting—and they merit it.
This bottling has been featured at MICHELIN-three-star restaurant SingleThread Farm and perennial hotspots like The Ivy in Beverly Hills. While it’s a darling of fine dining and tastes great now, it’s also going to cruise for the next five to ten years in the cellar. As for us? This is going to be in our glasses for the first cold seafood tower we attack this summer.
