    Generations of Wine Sages in Chablis

    William Fèvre is a hugely important name in Burgundy. But there’s another branch of this royal family of Chablis that deserves to be known much more widely: Domaine Nathalie & Gilles Fèvre.

    In 2022, a vintage that Decanter rated 4.5 out of 5 stars, this team of husband, wife, and daughter (all trained enologists) NAILED their village Chablis. Grown organically on hillside and plateau vines between 15–25 years of age, this bottle shows the kind of concentration and classicism that has landed them placements on carefully-curated wine lists like Seattle’s Wild Ginger, a Wine Spectator Grand Award Winner since 2009. 

    Back in 2003, Nathalie and Gilles Fèvre decided to stop selling their best fruit to Chablis’ renowned co-op, La Chablisienne. It wasn’t an easy call. Nathalie was the chief enologist there for 12 years, after all, and her husband Gilles’ great-grandfather was one of the founders. But the Fèvres knew their old-vine fruit was too precious to be blended into anonymity. 

    You can’t go wrong stockpiling 2022s from Chablis, a hot season that nevertheless has great acidity, thanks to some well-timed, refreshing rain in August. Decanter called it “a very fine vintage for Chablis that combines the freshness of 2017/2021 with the warmth and ripeness of 2019/2020.”

    We savored this bottle with a Dungeness crab risotto, an unforgettable pairing. It’s a wine that will brighten whatever table you bring it to.
