Burgundian Elegance on the Sonoma Coast

SingleThread is one of this planet’s most revered restaurants: The Sonoma County destination has been on Pellegrino’s World’s 50 Best Restaurants list, and it’s held three MICHELIN stars since 2019.

Needless to say, SingleThread also has the world’s finest wines at their fingertips—and they’ve poured Stéphane Vivier’s outstanding Sonoma Coast Pinot Noir by the glass.

Vivier is one of Northern California’s true Pinot superstars: He was tapped by Aubert de Villaine of Burgundy’s iconic Domaine de la Romanée-Conti to head up his personal California outpost, Hyde de Villaine. Over his career, Vivier has built up the credibility to get him access to some of the most prestigious vineyards in Sonoma.

Stéphane’s sensational 2022 Sonoma Coast Pinot comes from the historic Flochini Vineyard in the Petaluma Gap, and includes fruit from the A-list Sonoma Coast sites Gap’s Crown and Van der Kamp—the sources of Vivier’s $75+ single-vineyard bottlings. It’s no wonder SingleThread has charged a premium to sip Vivier’s vivacious, Burgundian-inspired Pinot in their hallowed dining room—$24 per glass, to be precise.

Stéphane Vivier always had a precocious nose. He grew up in a small village in Burgundy, and at the age of five he could guess what his mother was making for lunch just from the aromas. He had his first taste of Pinot Noir at age 10, and later learned winemaking from a neighbor whose family had been producing wine for centuries. After earning degrees in viticulture and enology, he rose through the ranks of the wine world and eventually found himself accompanying de Villaine to California.

Vivier was with Hyde de Villaine until the end of 2020, and now he’s completely focused on his own label, which he and his wife Dana launched a decade ago, bankrolling the venture with a single credit card and initially producing a mere 30 cases. That number has grown only by a few hundred since then, despite demand reaching a fever pitch in recent years—even NY’s three-star Eleven Madison Park carries Vivier wines, so we’re very fortunate to have landed this phenomenal 2022.
