    Bollinger not only affords Ayala privileged access to prime vineyard sites in the heart of the Montagne de Reims and Côte des Blancs, but has also made substantial investments in the cellar that makes it possible to vinify and blend wines in small lots.

    Brut Majeur was crafted by Reims native Caroline Latrive, a second-generation enologist who is one of the few females in Champagne holding the title of cellarmaster, one of the most revered positions in the region. 

    The wine is a blend of Chardonnay (40%), Pinot Noir (40%) and Meunier (20%). The interplay of Pinot Noir and Chardonnay provides superb balance and vinosity, while Meunier adds gorgeous red fruit and vivacity. Vinification, aging, riddling, and disgorgement are conducted on-site. The wine is fermented in stainless steel, giving it a fresh, precise style. It then spends 54 months on the lees—a year and a half longer than required—and is shipped after at least three months post-disgorgement, giving the Champagne time to come together before you pop the cork.
