    One of Champagne’s Most Talented Cellarmasters

    Ayala makes reference-point non-vintage Brut Champagnes—and their Brut Nature combines prime fruit sources, a fresh and vivacious character, and the steely edge of the zero-dosage style. It’s a crowd-pleaser that satisfies on an intellectual level, as well.

    This historic, 162-year old house was one of the one of the 18 founding members of the Grandes Marques de Champagne syndicate in 1882. It has been a favorite of the British royal family since 1908, when Edward VII gave Ayala a Royal Warrant at his coronation.

    For the last few decades, Ayala has been owned by Bollinger, which gives them privileged access to prime vineyard sites in the heart of the Montagne de Reims and Côte des Blancs, and it shows: They've also made substantial investments in the cellar that make it possible to vinify and blend wines in tiny lots for maximum blending flexibility. 

    Today, their secret weapon is their Chef de Cave, Reims native Caroline Latrive. Latrive is a second-generation oenologist who earned her master’s degree in Oenology in 2005 while working at Bollinger. She joined Ayala in 2006, became Chef de Cave in 2011, and today is one of the few females in Champagne holding the title of cellarmaster, one of the most revered positions in the region. Champagne expert Charles Curtis MW has sung her praises, writing, “Latrive imbues the winemaking with an appreciation of elegance and delicacy.”

    She composed this blend of 55% Chardonnay, 30% Pinot Noir, and 15% Meunier from no less than 70 different crus, vinified as micro-lots in stainless steel. Once the wine was composed, it was then treated to extended aging en tirage, giving it an outstanding fineness on the palate.
