At HEAVENSAKE, Champagne winemaker Regis Camus partners with some of the most famous sake breweries in Japan. For his efforts, HEAVENSAKE has been featured at Michelin-starred spots like New York's Sushi Nakazawa, Hakkasan, Yuba, and Tao.

This sake, the HEAVENSAKE Junmai Daiginjo Miyagi (aka "Label Noir"), takes it to a new level. To make it, Camus worked with cult producer Niizawa, whose bottles grace the list at Michelin three-star SingleThread at up to $8,000 per bottle. Really.

Camus's bottles are always a reflection of his acumen and the partner-brewery's style, and this is HEAVENSAKE's most delicate expression. Showing beautiful aromas of florals, citrus, lilac, and spice, it's creamy yet electric on the palate, with layers of crushed-limestone minerality, lemon curd, and a long, cleansing finish that goes on and on.

Located in Miyagi Prefecture, Niizawa is absolutely iconic. It was founded in 1873, and after over a century of success, it was destroyed by the 2011 earthquake. Now, the brewery has been rebuilt and nursed back to glory by proprietor Iwao Niizawa and toji Nanami Watanabe, a female phenom took the reins as brewer at just 22 years of age! She's undeniably one of the world's biggest sake stars.
