    All Cavas Are Not Created Equal

    We’ll keep this one short: By the time you read the story, half the allocation will be sold.

    Sparkling wine made in the Champagne method is an expensive and labor-intensive endeavor. It takes a good 15 to 24 months after harvest until the wine is ready to ship.  That pencils out in Champagne because buyers are willing to pay for the extraordinary track record of the greatest sparkling wine in the world. Cava producers don’t have it so easy. They don’t have the luxury to charge Champagne prices — even when the cost of producing the wines and aging requirements are exactly the same.

    That said, not all Cavas are created equal, of course.  There’s a reason why we’ve never offered one to our members before. It turns out, we were waiting for today — because we’ve found a Cava Reserva worthy of your attention.

    Bodegas Pinord has been making wine in the Penedès region of northeastern Spain for more than a century. Cava is their family business and business is good.  The Cavas are made in the method traditonal, the farming is organic. The May Y Mas Cava Brut Reserva is a blend of Macabeo, Parellada, and Xarel·lo grapes, all sourced from Bodegas Pinord’s 185-acre vineyard 1,000 feet above the Mediterranean. The secondary fermentation happens in each individual bottle and the wine is aged 15 months before release — just like Non Vintage Champagne. Unlike in Champagne — unfortunately for them but fortunately for us — they can’t charge Champagne prices.

    Green-tinged straw color with high-toned lime and yellow apple with hints of fresh herbs and a mineral smokiness. Very dry, focused, and racy on the palate with citrus zest and pear skin flavors. The finish is tight and linear and ends on a racy, saline note. Drink over the next 5 years.
