Sicily's Great Dry-White Sleeper
The best Sicilian whites taste like where they come from: sun-warmed lemon, sea salt, and stone that held the afternoon's heat. Grillo is one of the grapes that gets you there, and Caruso & Minini make a benchmark version in the windswept hills above Salemi, on the western side of the island.
Grillo runs straight through the history of Marsala. It's a 19th-century Sicilian crossing, bred to give the island's famous fortified wine more perfume and lift, and for generations that was its whole job. When Marsala fell out of fashion, Grillo nearly went with it, until a handful of growers saw a second act for the grape: a dry white built on bright acidity, floral aromatics, and a saline mineral streak that makes it a natural at the table. It's become one of the most compelling whites on the island.
Caruso & Minini have been rooted in western Sicily since the late 1800s, when the Caruso family grew grapes for Marsala's fortified-wine houses. The winery as it stands came together in 2004, when third-generation Stefano Caruso joined forces with the Minini family from the mainland, and his daughters Giovanna and Rosanna help lead it.
Their vines sit inland at 200–400 meters, cooled by steady sea breezes and planted on alluvial soil littered with softball-sized stones the locals call cuti. The cuti soak up the day's heat and release it back to the vines after dark, encouraging even ripening while the grapes hold onto their acidity. That combination—warm days, cool nights, stony ground—leaves a distinct mineral cut in the glass.
This bottling comes from the organically farmed part of the estate, Giovanna's Bio project. The grapes ferment in oak and acacia casks and then rest on the lees, which gives the wine a gentle texture and roundness without costing it any freshness.
The 2025 growing season was a welcome one in Sicily. After two difficult vintages, generous winter and spring rains restored the island's water reserves, the fruit came in clean and healthy, and the whites show a lovely balance between ripe fruit and lively acidity—proportion you can taste in the glass.
It's the kind of white that suits almost anything from the sea, a plate of pasta with something green, or a warm evening with no particular plan.
