The Pinnacle of Château Pavie

In Saint-Émilion, very few estates can rival Château Pavie’s location. Even fewer can match the majesty of what Gérard Perse and his team have built there over the past quarter century—and in 2020, they made what may be the definitive expression of this storied estate.

The 2020 growing season delivered greatness across Bordeaux, but especially on the Right Bank. After a warm, dry summer that concentrated flavors and thickened skins, September arrived with warm days and cool nights—ideal conditions for a slow, even finish to the ripening season. For Pavie, perched atop Saint-Émilion’s limestone plateau on the steepest slopes of any top estate in Bordeaux, the vintage played perfectly to the house’s strengths.

Château Pavie’s vines enjoy abundant sunlight while the well-draining limestone forces roots deep in search of moisture—a fight that produces the kind of densely concentrated, mineral-threaded fruit that defines the grand vin here. The estate has been recognized since Roman times as one of the finest sites in the region, and the modern era of Pavie began when Gérard Perse purchased the property in 1998.

Perse immediately set about realizing the estate’s full potential. He built new temperature-controlled fermentation vats and cellars, and brought in legendary consulting winemaker Michel Rolland to reshape the vineyards from the ground up. Rolland drove yields down from 55 hectoliters per hectare to fewer than 30 through severe pruning and rigorous green harvesting—ensuring that every grape left on the vine had the concentration and depth to contribute to a truly great wine.

The result is one of the most distinctive voices in Bordeaux: powerful and opulent, yet threaded with precision and freshness that rewards patience as much as it rewards opening a bottle tonight.

The 2020 is a wine of extraordinary presence. Dunnuck praised the “perfect integration of fruit, oak, and tannins” and singled out Perse for “not following trends and for continuing to make a truly Grand Vin that offers a rare mix of power and elegance.”
