The New School of Champagne
Most Champagne houses would rather you didn't ask what's in the bottle. For centuries, the great names guarded their blends like state secrets, and drinkers were expected to trust the label rather than the contents. EPC was built to do the opposite.
Launched in 2019, EPC set out to rewire how Champagne's most famous wine gets made and understood—one of a new wave of young houses challenging the region's oldest habits. The premise is radical in its simplicity: tell people exactly what's in the bottle, and exactly who grew it.
That means traceability all the way to the source. Rather than buying grapes anonymously and folding them into a house style, EPC co-creates each cuvée hand in hand with independent growers, with a cellar master shaping the final blend. The growers get credit, and the drinker gets the whole story.
The winemaking follows the same instinct. EPC works with a deliberately restrained hand—low dosage, limited sulfites, and as little intervention as the wine will allow—so what reaches the glass is freshness, energy, and fruit with nothing standing in their way.
There's a certain hedonism beneath the rigor, too. For all its precision, EPC is a house oriented squarely around the pleasure of the table—the conviviality of a bottle opened among friends, the sense that fine Champagne should be lived with rather than reserved for occasions. That sensibility shows up in the smallest details, right down to a label fitted with a temperature strip that signals when the wine has reached its ideal chill.
None of it would matter if the wine didn't deliver, and this one does. We first tasted it at the Ritz-Carlton Las Colinas, and it has earned Michelin-caliber admiration on high-end lists well beyond that—serious recognition for a house still early in its story.
What lands in the glass is exactly what EPC promises: a vibrant, modern Brut with lift and joy, made to be poured and shared rather than studied. It's Champagne with nothing to hide, and plenty to say.
